Who?
theIvan Pascual, master chocolatier in Lleida and winner of the Spanish World Chocolate Masters, offers us his Bean to Bar technique to create one artisan chocolate, select and exquisite, with a more natural chocolate and a distinctive flavor.
The Dr. Blanca Salinas-Roca, specialized in nutrition at the Ramon Llull-Blanquerna University and the University of Lleida has provided her knowledge of food and nutrition in order to create a really healthy chocolate.
Spirulina Organa has launched the project so that you can discover spirulina as a food that can be enjoyed in the mouth, that takes care of you and that is pro more sustainable planet
What?
Beantobar chocolate
The flavor of this chocolate is achieved through the first fermentation, where a large number of microorganisms act that contribute acidic characteristics, modify the sugars of the cocoa bean and its internal structure. Fermentation and drying take place in the country of origin, immediately after harvesting to favor the growth of microorganisms. Once the fermentation is done, it is dried for safe export. Hence the name bean to bar: from the cocoa bean to the chocolate bar: direct and without intermediaries
Spirulina Organa
The taste of good quality spirulina is neutral. Organa with its production farm in Almenar (Lleida) breaks with the concept of industrial spirulina, to make a very high quality spirulina dehydrated at a very low temperature or directly serve it fresh. With a very neutral taste, but a characteristic touch, will you be able to find it in the chocolate?
Spirulina provides all the nutritional benefits what you wouldn't imagine he could have a chocolate. Among others, metabolic regulator effect (satiety, weight control), antioxidant effect (combats aging) and anti-inflammatory, regulation of the glycemic index. Plus all the minerals, probiotic and prebiotic vitamins.
Vegetable fiber and nuts

Just a small comment-question, the presentation in the glass jar is very good, but it would not be more ecological and sustainable in recycled and recyclable cardboard boxes. Do most people throw those glass jars in the bin? It's a doubt and a question that I ask you, I'm sure you've already evaluated it and suspended the pros and cons.
